I’ve loved George Michael’s voice ever since I was a young girl, staring at the cover of our Wham LP in the 80s and listening to him croon “Wake me up, before you go-go.” In my opinion, his is one of the smoothest, silkiest, most divine voices I’ve ever heard. It’s so easy to be lulled into whatever emotion he’s trying to get across in the song.

There are so many George Michael songs that I love and this is one of my favourites. The jazzy style, the wistful lyrics, that sublime voice. It’s perfection. Michael Buble did a cover of it and sorry, Buble, your version just doesn’t cut it.

I listen to this song when there are too many mad emotions running through my head and I need to calm the hell down. It’s like fine wine – it mellows me out. Plus, it’s a great karaoke song!

I want to share some blogger friend love today. I made these amazing peanut butter apple oat blondies a few weeks ago using the recipe form my dear friend, Allie of Baking A Moment. I had the pleasure of meeting Allie in person a year ago at the International Food Bloggers Conference in Seattle. She’s just as sweet, friendly, smart, hilarious and overall wonderful as she appears on her blog.

When I saw these blondies on her blog a few weeks ago, I knew that I had to make them. The only changes I made to Allie’s recipe are increasing the amount of cinnamon to 1 teaspoon since I think it pairs fabulously with peanut butter, using a mix of chocolate chips and peanut butter chips, and swapping out the M&M’s that she used for mini Reese’s peanut butter cups which I pressed into the top.

Because the blondies are made primarily with whole wheat flour, apple sauce, oats and peanut butter (with just a scant 1/2 cup of butter), I felt they were pretty healthy (healthy enough for me to devour half of this batch before giving the rest to my coworkers).

The blondies were delightfully chewy and hearty, not overly sweet, and full of peanut butter flavour. If you’re a PB lover, you’re going to have a hard time resisting.

These look so good and I love your idea of using peanut butter cups because they make everything better (and the applesauce and oats definitely balance them out! ;))

  6. Oh. My. Goodness. Nancy, It is a good thing those photos are not real desserts for me to devour. I’d be Ms. No-Manners Monster grabbing squares by the handful. Love the combo of “healthy” oats, wheat flour, apples and the decadent pb chips, chocolate and peanut butter…Oh, my gosh, I’ve got to get off this site! But, first, I’ve got to go get the recipe =) And George Michaels is quite the crooner…Although I’m a Bubler, too =)

  7. Don’t know how I missed this post Nancy!! These look amazing and I love how you pressed the mini peanut butter cup in the center of each bar. OH MY! I loved George Michael too! He sure was a cutie pie. I have a funny memory about him….when I was in high school…i was blaring my radio upstairs in the gameroom and the song “I want your sex” was playing really loud and my Dad came bursting up those stairs madder than a hornet demanding I turn it off, lol! Honestly, though, I kid you not….I never, ever paid attention to the words to most songs…I just like the music and beat of them so I don’t think it even registered what he was singing about. I just will never forget my Dad’s reaction. I cearly realized it after the fact that it wasn’t a good song to listen to, haha!

  8. That is a favorite George Michael song of mine…yes, so, so love it! Just gorgeous blondies! I love that they are healthy enough to say why not eat 2! or even 3?? I don’t know why I don’t make blondies more often. Actually, my daughter reminded me recently that I need to make some and this is what it will be! Off to check out the recipe…xo
