I’m honoured today to be guest posting for my dear friend, Alice, aka the Hip Foodie Mom. Alice and her family just moved from Seattle to Wisconsin, relocating for her husband’s work. It’s been a pretty tumultuous year for Alice – right around the time that she learned she had to move, her sister donated a kidney to their mom and Alice flew to Dallas to spend time with them. She then came right back to the Pacific Northwest and began preparing for the big move with her two kids (who are absolutely adorable by the way), all while her husband was already working in Wisconsin.
Whew!
I seriously don’t know how she does it all!
I was more than happy to do whatever I could to help ease Alice’s load. I can kinda relate, even though I’m not dealing with even a tenth of all the insanity Alice is dealing with! The Husband and I just purchased a house and now we’re preparing our apartment for sale. It’s been busy to say the least, which is why there’s been radio silence on my blog for the past three weeks.
For today’s guest post, I made an apple spice cake filled with layers of apple pie filling and maple cream cheese frosting. It’s delicious but unfortunately turned out to be a bit of an epic fail.
I was super disappointed with the tragedy that befell my cake but I knew that Alice would totally understand and would have a good laugh. I never want to hide my epic fails from you, dear readers, because they’re always amusing and it just goes to show that we’re all human.

Uh-oh! Layer cakes always seem to fail me. I have had a lot of “volcanic” experiences to say the least!
I soooo loved this cake. I plan to make this but expose the layers and the filling kind of like trifle as I really like the way it looked. I just need to find me a beautiful trifle dish! Thanks for sharing. Until the next Cakefest!

That cake looks amazing to me Nancy! I’ll hope over to Alice’s blog in a second but if the only fail is that it fell apart then it’s no fail because you can still eat that beauty!

I’m going to go read about your cake now but it looks absolutely amazing and even if it fell apart I would LOVE to dig a spoon into it still! Congrats on purchasing a house and good luck with everything that goes along with it – I know it’s a ton of work but it will be worth it hopefully!

Did you ever look at Bakers Royale? She loves broken cakes. I think she actually smashes them on purpose! I’ll tell you what though, that ol’ crack wouldn’t stop me from diving headfirst into this baby!

I had a couple of people tell me that they really like that I showed my epic fails on IG. I even wrote a couple of posts about them too. And you’re right! We are humans and make mistakes and instead of people thinking we are gifted bakers, I find it humbling to show them the other side of this. And by the way, I’d still stuff my face eating this cake. Congrats on the new house!

This cake looks so amazingly delicious Nancy! Apple spice is one of my favorite cake flavors. We all make mistakes when baking/cooking from time to time, and I highly respect and admire that you shared this tiny mishap with us instead of hiding it. I love that you always keep it real girl! 😉
